The Westin Manila Launches Green Mondays with Naked Foods Featuring Plant-based Iterations of Southeast and East Asian Dishes

The Westin Manila partners with whole food, plant-based chef and wellness consultant, Cinty Yñiguez, for the fourth instalment of Green Mondays. This collaboration is featured every Monday, from June 9 to 30, 2025, at the One Dish Wonders live station of Seasonal Tastes’ lunch buffet.

Green Mondays, established by the hotel team in November 2024, features a series of collaborations with local artisans, brands, chefs, and restaurants. Anchored on the Eat Well program, this culinary special is a sustainability initiative that aims to spread awareness on zero-waste menus and healthy, nutrient-dense alternatives, and make them accessible and easily approachable through flavours and forms that are already familiar to the community.

In the previous instalment, the hotel’s Executive Chef, Rej Casanova, partnered with Cosmic Philippines to showcase plant-based versions of Filipino comfort food.

For this new instalment in June 2025, Chef Casanova and Chef Yñiguez of Naked Foods have lined up a selection of plant-based iterations of Southeast Asian dishes. From plant-based unagi to Pad Thai, guests can fill up guilt-free and without compromises on the rich, familiar tastes from the region.


Accessible plant-based options

For Chef Yñiguez, good food is crucial in sustaining a good and healthy lifestyle. This realization was the final push she needed to start Naked Foods, a food business centered around plant-based options and alternatives for Filipinos seeking to make a transition into clean eating, or those just curious to try.

“I completely believe that there were good plant-based food out there that people just weren’t aware of,” explains Chef Cinty Yñiguez. “And I wanted to be mindful about introducing this to the community. I felt that if people had access to good, clean, healthy, delicious, and nutritious plant-based meals, they would be able to incorporate this into their diet.”

Aside from Naked Foods, Cinty Yñiguez also founded the Culinary Wellness Academy, where she teaches basic, moderate, and advanced techniques in preparing healthy meals using plant-based ingredients to nourish the body from within.


Small, mindful steps

Chef Yñiguez’s has been on a plant-based diet for 25 years now and believes anyone can do it, too, at their own pace.

“I believe in the art of small, mindful steps. We could start with one meal a week, and then we can build up on that and perhaps make it one day in a week. Slowly but surely,” she says.

Through this partnership with Naked Foods, The Westin Manila brings guests closer to healthy plant-based alternatives they can incorporate into their lives, like the gluten-free and keto-friendly Skinny Pad Thai (shirataki noodles with fresh vegetables in a zesty tamarind sauce), Crispy Szechuan Mushrooms (crispy fried mushrooms packed with heat from a Szechuan spice blend, glazed with a tangy tamarind sauce and a rich vegan hoisin), and No-Bake Banoffee Pie (a classic dessert favorite featuring Naked Foods’ graham cracker crust, naturally sweet bananas, coconut caramel, and a light dairy-free whipped topping).
